Summary

Monitor the implementation of occupational health and safety policies and procedures
Monitor the implementation of quality and food safety programs

Diagnose and respond to product and process faults (bread)
Produce bread dough
Scale and mould dough for intermediate proof
Conduct final mould and final proof
Bake bread
Diagnose and respond to product and process faults (pastry, cake and cookies)
Produce pastry
Prepare fillings
Form and fill pastry products
Bake pastry products
Produce sponge, cake and cookie batter
Bake sponges, cakes and cookies
Decorate cakes and cookies
Produce artisan breads
Produce yeast-raised products
Participate effectively in a workplace environment
